  • sealing covers (4 pieces);
  • cutting board;
  • knife;
  • a cauldron with a lid (can be replaced with a deep skillet or a saucepan with a thick bottom and walls);

Ingredients Required

Products you need:

  • 2 kg of zucchini;
  • 1 kg of carrots and onions;
  • 2 pods of green bitter pepper;
  • 150 grams of tomato paste;
  • 200 g of sunflower oil;
  • a teaspoon of the essence of vinegar (70%) or 50 ml of vinegar 9%;
  • 1/4 liter of water;
  • 2 tbsp. l salts;
  • 4 tbsp. l Sahara.

Important! The amount of water depends on the final consistency of the product. If you want a thicker caviar, take not 250, but 200 ml.

Step by Step Cooking Process

Caviar is prepared as follows:

  • Immediately before the process, wash and sterilize the jars.
  • Wash and peel vegetables.
  • Cut carrots into small cubes.

  • Pour oil into the cauldron, heat it up.
  • Pour out carrots.
  • Add water, salt, sugar.
  • Mix well, cover with a lid.
  • Wait until it boils.
  • After boiling simmer for 10 minutes (also covered with a lid).

  • Pepper seeds and chop it smaller than other vegetables.
  • Pour all sliced ​​into the cauldron and mix until smooth.

  • Close the lid, bring to a boil.

Cooking process:

  1. Wash and clean all vegetables.
  2. Onions thinly cut into strips.
  3. Cut the carrots into very small cubes or grate them on a coarse grater.
  4. Red pepper cut into small cubes.

  4. Pour zucchini, fry until soft, set aside in a separate container.

Terms and conditions of storage blanks

Home-made caviar is stored for a maximum of 12 months, depending on the type of preservation:

  • in sterilized cans - at a temperature not higher than +20 ° С;
  • in unsterilized - no higher than +10 ° C in a dark place.

The shop will stay for 2 years at a temperature not exceeding +20 ° C. Open product should be stored in a refrigerator in a glass, closed container. Store - no more than 3 days, home - no more than a week.
