Very often, cucumbers-gherkins are chosen for preparations for the winter, since they are small, they fit a lot in a jar, have a density and elasticity and aesthetic appearance.
Required Ingredients
We will need:
- cucumbers - 5 kg;
- onions - 1 kg;
- sugar - 5 tbsp. l .;
- salt - 2 tbsp. l .;
- vinegar - 100 ml (9%) or 1 tbsp. l acetic essence, diluted in 100 ml of water;
- dill - 1 bunch (to taste);
- black pepper peas - 0.5 tbsp. l
Important! Dill in the recipe can be replaced with parsley or no added greens, it all depends on taste preferences. Optionally, you can also add hot peppers or garlic cloves.
Kitchen appliances and utensils
In order to prepare a snack for the winter, you need the following:
- food processor or knife and cutting board;
- large bowl;
- spoon;
- 6 cans with a volume of 950 ml and 1 - 500 ml;
- 7 screw caps;
- large sterilization pan;
- several kitchen towels;
- a blanket.
Step-by-step recipe with photos
- We clean, wash and chop the onion in half rings.
- Wash cucumbers and dry on a towel. If you use large cucumbers, then they need to be cut in half, and then chopped into semi-rings, but if the cucumbers are medium-sized or small, then you can cut them into slices.
- Put the sliced vegetables in a large bowl and add salt, pepper, sugar and gently mix with your hands.
- Leave a bowl of salad at room temperature for 30 minutes to let the cucumber juice.
- In the meantime, we are preparing jars, for the amount of vegetables specified in the recipe, we need 6 cans of 950 ml each and one 500 ml can, but you can use jars of any size that are more convenient for you.
- The container for preparation needs to be washed and dried.
- After 30 minutes, the cucumbers have already started the juice and we return to cooking salad. Finely chop the dill and add to the bowl with onions, cucumbers and spices and mix thoroughly.
- Add 100 ml of 9% vinegar or 1 tbsp. l Acetic essence, diluted in 100 ml of water, and again thoroughly mix the salad.
- We spread the mixture obtained in cans, fill them with a tight tamping, so that the cucumbers were allowed to juice.
- Then the jars with the workpiece must be sterilized. To do this, lay out a towel at the bottom of the pot, pour water and place the jars so that they are "by the hangers" in the water, and set on fire. After boiling water, sterilize the workpiece for 15 minutes.
- After the indicated time we take the banks out of the water and tightly tighten the lids.
- Turn the container with the salad upside down and cover with a warm blanket until it cools completely.
- A delicious snack of sliced cucumbers for the winter is ready, you can eat it in 14 days. At this point, vegetables marinate and acquire the necessary taste.
